There is significant interest in methods for the early detection of quality changes in cereal grains. The development of electronic nose technology in recent years has stimulated interest in the use of characteristic volatiles and odours as a rapid, early indication of deterioration in grain quality. This review details the current status of this area of research. The range of volatiles produced by spoilage fungi in vitro and on grain are described, and the key volatile groups indicative of spoilage are identified. The relationship between current grain quality descriptors and the general classes of off-odours as defined in the literature, e.g. sour, musty, are not very accurate and the possible correlation between these for wheat, maize and other cereals, and volatiles are detailed. Examples of differentiation of spoilage moulds and between grain types using an electronic nose instrument are described. The potential for rapid and remote grain classification and future prospects for the use of such technology as a major descriptor of quality are discussed. (C) 2000 Elsevier Science Ltd.

Catalytic reforming of palm kernel shell microwave pyrolysis vapors over iron-loaded activated carbon: Enhanced production of phenol and hydrogen

This study addresses the in-situ microwave catalytic reforming of volatile matter from palm kernel shell (PKS) over iron-loaded activated carbon (Fe/AC) catalysts. The impacts of catalyst composition on the secondary gas-phase reactions and distribution of products were studied at 500 C. It was found that the Fe/AC catalyst promoted the yield of light gases. Using the 1%-Fe/AC catalyst, the yield of gaseous fraction peaked at 37.09 wt%. The selectivity of the deoxygenated products was promoted in the presence of Fe. Catalytic reforming of PKS pyrolysis vapors over Fe/AC drastically enhanced the generation of phenol and H2, the concentrations of which reached 75.09 area% and 75.12 vol%, respectively. Catalytic pyrolysis of syringol and guaiacol as model compounds showed that Fe/AC catalyst promoted the demethoxylation and deoxygenation reactions to selectively generate phenol which was explained by oxophilic reactivity of the active Fe sites.

Examination of the chemical changes in cured phenol-formaldehyde resins during storage

Chemical changes occurring within cured phenol-formaldehyde resins (resite and novolak type) during their storage were investigated by FT-NIR, py-GCMS and inverse gas chromatography. It was shown that a mixture of resite with novolak was less stable than resite or novolak itself as regards bulk properties. This aging phenomenon is mainly due to reaction of ammonia (product of hexa decomposition) with CH2OH groups present in resite. FT-NIR technique seems to be the least sensitive method for assessment chemical changes occurring during cured resins storage. Applications of py-GCMS and IGC method made able to indicate that more significant changes were for bulk samples (py-GCMS results) than on their surface (IGC results).

Sensory characteristics of chemical compounds potentially associated with smoky aroma in foods

Smoky aroma can either enhance sensory quality of foods (e.g. meat or cheese) or be detrimental to the product (e.g. raw or processed grains and grain products). Twenty-one chemical compounds suggested from the literature or from gas chromatographic headspace analysis of raw grains as potentially responsible for smoky aroma were studied. Five highly trianed sensory panelists smelled each compound dissolved in propylene glycol (if soluble) at a dilution of 5,000 to 20,000 ppm depending on the aroma strength of the compound. Approximately 60% of the compounds were found to have some smoke character, although the intensity of smokiness often was low. Some compounds such as benzyl disulfide and 3,7-dimethyl-6-octenoic acid were predominately smoky, but had other aroma characteristics that were lower in intensity. Most compounds had other aroma characteristics that were more intense than smoke (e.g. 2-ethylpyridine) and some compounds, such as 1-methylpyrrole were not smoky at all.

Diagenetic transformation of organic matter in the Holocene sediments of the Black Sea: pyrolysis data

The article presents the results of pyrolysis (Rock-Eval) and pyrolysis-gas chromatography-mass spectrometry analysis of organic matter (OM) in the Holocene sediments of the Black Sea. The studied samples represent two parts of the sedimentary column: coccolith ooze with 2.8% Corg at the top and sapropels oozes with 8.5% Corg at the bottom. The deposition of Holocene sediments was inferred to take place under euxinic conditions, which are more favorable for organic-matter preservation and sapropel deposition during the Old Black Sea stage. The results show that the modern processes of microbially mediated methane oxidation in the Old Black Sea oozes are interpreted as the main cause of their apparently lower degree of diagenetic transformation as compared to that of coccolith oozes.

TG-GC-MS study of volatile products from Shengli lignite pyrolysis

Thermal degradation of Shengli lignite was studied by thermogravimetry coupled with gas chromatography-mass spectrometry (TG-GC-MS) for a temperature range from room temperature to 1200C at a heating rate of 5C/min. The volatile products released from the lignite gradually with the programmed temperature. The main reaction of pyrolysis took place between 350C and 800C. Seven sub-curves were used to fit the DTG curve to analyze the breakage of different bonds. More than 100 different substances were identified at different temperatures from the GC-MS results. Alkanes and benzene series were the major constituents of the released volatile products along with alcohol, naphthalene, benzofuran, indane, indole, biphenyl, etc. Most of the aliphatic compounds were released around 430C with chain lengths up to C21, with the majority being between C1 and C5. Aromatic hydrocarbons were also released mostly at around 430C. The number of substituents in a single aromatic compound was found between 0 and 4. The length of the substituent was C1-C6 (sometimes heteroatom instead) and C1 accounted for the most. Generally, TG-GC-MS results presented the mass loss and released gas information with the programmed temperature to bring a better understanding of the structure of the lignite and the pyrolysis process.

Aroma profile of rice varieties by a novel SPME method able to maximize 2-acetyl-1-pyrroline and minimize hexanal extraction

The solid phase microextraction (SPME) has been the most used technique for the extraction of volatile compounds from rice because of its easy operation and solvent-free. The extraction parameters, sample mass and incubation temperature, were optimized through a central composite rotational design (CCRD), aiming at maximizing the extraction of 2-acetyl-1-pyrroline (2AP), the main compound responsible for the aroma in aromatic rice, and minimizing the generation of hexanal, a marker of lipid oxidation. Besides, the time of sample incubation and fiber exposure for the extraction of the volatile compounds from rice were determined. The optimized conditions for SPME were: 2.5 g of ground rice in a 20 mL vial, sample incubation at 80 C for 60 min and exposure of the divinylbenzene/carboxene/polydimethylsiloxane (DVB/CAR/PDMS) fiber in the headspace for 10 min. The optimized method was sucessfuly applied to 12 varieties of rice and principal component analysis (PCA) was performed to observe similarities in their volatile profile. A total of 152 volatile compounds were identified among the different rice varieties. From these, 42 were identified in arborio rice, 47 in basmati brand A, 43 in basmati brand B, 55 in black rice, 63 in brown rice, 39 in jamine rice, 50 in parboiled brown rice, 43 in parboiled rice, 54 in red rice, 63 in sasanishiki rice, 46 in white rice and 70 in wild rice.
